Red Leg Prawn, scientifically known as Fenneropenaeus indicus, is generally wild-caught from the sea.
The texture of prawn meat is tender. The taste is mild and sweet. The shell of the prawn is thinner, ideal for stir-frying.

White prawns have a nice, crunchy texture, but their meat is not that sweet as other prawn types. They grow to quite large sizes and are perfect for stir-frying in garlic-butter-lemon sauce.
