The chuck roll is the better, deboned portion of the Wagyu cow’s neck. The chuck roll is a unique part that really can’t be compared to other cuts, so if you’re searching for a different sukiyaki flavour, (or you want the ‘middle ground’ experience) try the chuck roll. Sukiyaki slices are slightly thicker than shabu-shabu slices.
